Birthday Brunch: Farmer Bob's Apple Puffs part of special menu



We recently hosted a friend's birthday brunch, and Farmer Bob went all out with his menu and presentation. It was truly beautiful. When I remarked how wonderful it was, he simply explained, "It's not every day you turn 70!" Yes, who would think we'd be celebrating our septuagenarian friends? Weren't those people our parents just a few years ago? 

Birthday Brunch Menu

Baked Grapefruit*
Cold Smoked Salmon
Poppy Seed Bread Cups with Scrambled Eggs**
Eggplant Parmigiana
Canadian and Regular Bacon
Farmer Bob's Apple Puffs (recipe below)
Sparkling Wine Mimosas with Fresh Squeezed OJ



Farmer Bob's Apple Puffs

Servings: 12

2 boxes Pepperidge Farm Puff Pastry Shells (or make your own)
3 Granny Smith apples
1 cup sugar
1/3 cup dried currants
1/2 cup Grand Marnier
Ground nutmeg
Slivered almonds

Bake puff pastry shells according to instructions. Let cool.
Dice apples into 1/2" square pieces (no need to peel).
Place all ingredients into sauce pan, bring to boil.
Turn to low and simmer until liquid is almost gone (20-30 mins).
Let cool five minutes.
Spoon apple filling into shells.
Top with pinch of nutmeg and slivered almonds.

*Baked Grapefruit - Sprinkle brown sugar on top and add a cherry. Bake at 350 for 15 minutes.
